Description
This croissant breakfast pie recipe features a comforting aroma of warm, cheesy goodness, promising a happy start to the day. It’s a hearty, family-friendly meal perfect for busy mornings, weekend brunches, or even a quick dinner idea.
Ingredients
- 6–8 large croissants, day-old preferred (approx. 300g)
- 10–12 large eggs
- 1 cup milk or half-and-half (240ml)
- 2 cups shredded cheese blend (Cheddar, Monterey Jack, Swiss, 220g)
- 1 cup diced vegetables (bell peppers, spinach, mushrooms, 150g)
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 Tbsp olive oil
Instructions
- Prep Your Pan: Grease a 9×13 inch baking dish generously. Preheat your oven to 375°F (190°C).
- Tear and Layer Croissants: Tear the croissants into rough 1-inch pieces. Arrange them in a single, slightly overlapping layer across the bottom of the prepared dish.
- Sauté Veggies: In a medium skillet over medium heat, warm 1 Tbsp olive oil. Add diced bell peppers and mushrooms; cook until softened and slightly browned, about 5-7 minutes. Stir in fresh spinach until just wilted, about 1-2 minutes.
- Whisk Egg Mixture: In a large bowl, whisk together the 10-12 eggs, 1 cup milk, 0.5 tsp salt, and 0.25 tsp black pepper until well combined and frothy.
- Assemble Layers: Sprinkle half of the shredded cheese over the croissant pieces. Spread the sautéed veggies evenly over the cheese. Pour the whisked egg mixture slowly and evenly over everything, ensuring the croissants are well coated. Top with the remaining shredded cheese. If it looks like some croissants are too dry, gently press them down into the egg mixture.
- Bake to Golden Perfection: Bake in the preheated oven for 35-40 minutes. The top should be golden brown and bubbly, and a knife inserted into the center should come out clean, indicating the egg is fully set.
- Rest and Serve: Let the pie rest for 5 minutes before slicing and serving.
Notes
For best flavor, choose organic eggs, freshly grated cheese, and fresh seasonal veggies. Day-old or slightly stale croissants work wonders here, soaking up the egg mixture beautifully. For a spicier kick, add a pinch of red pepper flakes with the veggies. If croissants appear too dry after assembly, gently press them into the egg mixture.
