- 120 ml full-fat coconut milk, chilled (1/2 cup)
- 30 g powdered sugar (1/4 cup)
- 15 ml fresh lime juice (1 tbsp)
- 2.5 ml alcohol-free vanilla extract (1/2 tsp)
- 200 g ripe mango, peeled and cubed (1 medium)
- 15 g powdered sugar (1 tbsp)
- 7.5 ml fresh lime juice (1/2 tbsp)
- 1 g cayenne pepper (1/4 tsp)
- 0.5 g sea salt (1/8 tsp)
- Fresh lime zest, for garnish
Instructions
- Prepare Mango Swirl: Blend cubed ripe mango, powdered sugar (15g), lime juice (7.5ml), cayenne pepper, and sea salt until smooth. Chill for 30 minutes, reserving 30 ml (2 tbsp) for drizzling.
- Make Pineapple Base: In a high-speed blender, combine frozen pineapple chunks, chilled coconut milk, powdered sugar (30g), lime juice (15ml), and vanilla extract. Blend until a smooth, thick, soft-serve consistency forms, scraping down sides as needed. Avoid over-blending to prevent melting.
- Create Ribbons: Fill a piping bag with alternating layers of the pineapple base and the chilled mango swirl. Gently press the layers against the sides of the bag to create distinct streaks without mixing excessively.
- Pipe and Serve: Pipe the swirled mixture into chilled bowls or glasses. Drizzle with the reserved mango puree and garnish immediately with fresh lime zest before serving.
Notes
For the creamiest texture, use full-fat coconut milk and make sure both the coconut milk and mango puree are thoroughly chilled before blending. Avoid over-blending the pineapple base; stop as soon as it reaches soft-serve consistency. For a faster cleanup, use a large zip-top bag instead of a piping bag for layering.
