- 30ml (2 Tbsp) Extra-Virgin Olive Oil
- 5ml (1 tsp) Kosher Salt
- 2.5ml (½ tsp) Freshly Ground Black Pepper
- 5ml (1 tsp) Smoked Paprika
- 5ml (1 tsp) Herbes de Provence Blend
- 150g (5oz) Onion, Diced
- 15g (3 tsp) Garlic Cloves, Minced
- 400g (14oz) Canned Diced Tomatoes, No Added Salt
- 100g (3.5oz) Pitted Kalamata Olives, Halved
- 15ml (1 Tbsp) Capers, Rinsed
- 5ml (1 tsp) Lemon Zest
- 30ml (2 Tbsp) Fresh Lemon Juice
- 30ml (2 Tbsp) Fresh Parsley, Chopped
- 15ml (1 Tbsp) Fresh Basil, Chopped
- Microgreens, for garnish
- Additional Olive Oil, for finishing
Instructions
- Sear Chicken: Sear chicken thighs in olive oil until golden brown.
- Sauté Aromatics: Sauté onion and garlic until softened.
- Build Sauce: Simmer tomatoes, olives, capers, lemon zest, and juice.
- Combine & Bake: Return chicken to skillet, nestle in sauce, and bake until cooked through.
- Rest & Garnish: Rest chicken, then garnish with parsley, basil, olive oil, and microgreens.
Notes
For best results, pat chicken dry before searing. Rinsing capers reduces their saltiness. A touch of smoked paprika adds depth.
