  • 30ml (2 Tbsp) Extra-Virgin Olive Oil
  • 5ml (1 tsp) Kosher Salt
  • 2.5ml (½ tsp) Freshly Ground Black Pepper
  • 5ml (1 tsp) Smoked Paprika
  • 5ml (1 tsp) Herbes de Provence Blend
  • 150g (5oz) Onion, Diced
  • 15g (3 tsp) Garlic Cloves, Minced
  • 400g (14oz) Canned Diced Tomatoes, No Added Salt
  • 100g (3.5oz) Pitted Kalamata Olives, Halved
  • 15ml (1 Tbsp) Capers, Rinsed
  • 5ml (1 tsp) Lemon Zest
  • 30ml (2 Tbsp) Fresh Lemon Juice
  • 30ml (2 Tbsp) Fresh Parsley, Chopped
  • 15ml (1 Tbsp) Fresh Basil, Chopped
  • Microgreens, for garnish
  • Additional Olive Oil, for finishing

Instructions

  1. Sear Chicken: Sear chicken thighs in olive oil until golden brown.
  2. Sauté Aromatics: Sauté onion and garlic until softened.
  3. Build Sauce: Simmer tomatoes, olives, capers, lemon zest, and juice.
  4. Combine & Bake: Return chicken to skillet, nestle in sauce, and bake until cooked through.
  5. Rest & Garnish: Rest chicken, then garnish with parsley, basil, olive oil, and microgreens.

Notes

For best results, pat chicken dry before searing. Rinsing capers reduces their saltiness. A touch of smoked paprika adds depth.
