Description

This classic Easy Coleslaw Recipe features crisp shredded cabbage and carrots tossed in a creamy, tangy mayo-based dressing. It’s a versatile, budget-friendly side dish perfect for any family meal, ready in minutes.

Ingredients

Scale
  • 1 medium head (600 g) fresh cabbage, green and purple, thinly shredded
  • 23 medium (200 g) carrots, finely shredded
  • 1 cup (240 ml) mayonnaise, full-fat or light
  • 2 Tbsp (30 ml) apple cider vinegar or white vinegar
  • 2 Tbsp (30 g) granulated sugar or honey
  • 0.5 tsp (2.5 g) salt
  • 0.25 tsp (1 g) black pepper

Instructions

  1. Prepare Vegetables: In a large mixing bowl, combine the shredded green and purple cabbage and finely shredded carrots.
  2. Make Creamy Mayo Dressing: In a separate small bowl, whisk together the mayonnaise, vinegar, sugar (or chosen sweetener), salt, and pepper until smooth and well combined. Taste and adjust seasonings as needed.
  3. Combine and Toss: Pour the dressing evenly over the shredded vegetables. Toss gently but thoroughly using tongs until all the cabbage and carrots are beautifully and evenly coated. If it seems a little dry, add an extra tablespoon of mayonnaise or a splash more vinegar to get that perfect consistency.
  4. Chill for Best Flavor: Cover the bowl securely and refrigerate for a minimum of 30 minutes, ideally 1-2 hours, allowing all those wonderful flavors to meld together and the vegetables to soften just slightly.

Notes

Consider using half mayo and half Greek yogurt for a tangier, lighter dressing. For low-carb, use sugar substitutes like Stevia or erythritol and check mayonnaise labels for any hidden added sugars. Most mayonnaise brands are naturally dairy-free, but always double-check.
