- 800g (1¾lb) chicken thighs, diced
- 150g (5oz) onion, diced
- 3 cloves garlic, minced
- 400g (14oz) diced tomatoes, undrained
- 250ml (1cup) low-sodium chicken broth
- 200ml (¾cup) heavy cream
- 100g (3½oz) Parmesan cheese, grated
- 2 tbsp (30ml) olive oil
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) Italian herb blend
- ½ tsp (2g) smoked paprika
- ½ tsp (2g) kosher salt
- ¼ tsp (1g) black pepper
- Fresh basil leaves, for garnish
Instructions
- Prepare Chicken: Season chicken with salt and pepper.
- Sear Chicken: Sear chicken in olive oil until browned.
- Sauté Aromatics: Sauté onion and garlic in olive oil until softened.
- Combine Sauce: Add tomatoes, broth, herbs, lemon juice, and cream to the crock pot.
- Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours.
- Finish Sauce: Stir in Parmesan cheese and optional butter.
- Taste & Adjust: Adjust seasoning as needed.
Notes
For an even richer sauce, use full-fat heavy cream and don’t skip the lemon juice.
