  • 800g (1¾lb) chicken thighs, diced
  • 150g (5oz) onion, diced
  • 3 cloves garlic, minced
  • 400g (14oz) diced tomatoes, undrained
  • 250ml (1cup) low-sodium chicken broth
  • 200ml (¾cup) heavy cream
  • 100g (3½oz) Parmesan cheese, grated
  • 2 tbsp (30ml) olive oil
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) Italian herb blend
  • ½ tsp (2g) smoked paprika
  • ½ tsp (2g) kosher salt
  • ¼ tsp (1g) black pepper
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare Chicken: Season chicken with salt and pepper.
  2. Sear Chicken: Sear chicken in olive oil until browned.
  3. Sauté Aromatics: Sauté onion and garlic in olive oil until softened.
  4. Combine Sauce: Add tomatoes, broth, herbs, lemon juice, and cream to the crock pot.
  5. Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours.
  6. Finish Sauce: Stir in Parmesan cheese and optional butter.
  7. Taste & Adjust: Adjust seasoning as needed.

Notes

For an even richer sauce, use full-fat heavy cream and don’t skip the lemon juice.
