- 3 Tbsp (45 ml) Dijon mustard
- 2 Tbsp (30 ml) whole grain mustard
- 3 Tbsp (45 ml) raw honey
- 1 Tbsp (15 ml) apple cider vinegar
- 2 cloves garlic, minced (≈1 tsp / 5 g)
- 1 medium onion, diced (≈150 g / 1 cup)
- 1 tsp (5 g) smoked paprika
- ½ tsp (2.5 g) black pepper
- 1 tsp (5 g) sea salt
- 1 Tbsp (15 ml) olive oil
- ½ cup (120 ml) low-sodium vegetable broth
- 1 tsp (5 g) cornstarch + 2 tsp (10 ml) water
- 2 Tbsp (≈6 g) parsley, chopped
- 1 tsp (2 g) lemon zest
Instructions
- Prepare Chicken: Season chicken thighs with salt, pepper, and paprika.
- Sear Chicken: Sear chicken in olive oil for 3-4 minutes per side.
- Sauté Aromatics: Sauté onion and garlic until softened.
- Deglaze Pan: Add broth and scrape up browned bits.
- Make Sauce: Combine mustard, honey, vinegar, and lemon zest.
- Combine & Crockpot: Pour sauce over chicken in crockpot.
- Slow Cook: Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Thicken Sauce: Stir in cornstarch slurry and cook for 15 minutes.
- Rest & Serve: Let chicken rest before serving.

Searing the chicken adds significant flavor. Adjust honey to control sweetness. Bone-in, skinless thighs stay moistest.
