Description

These easy crockpot honey mustard chicken thighs are a flavorful and convenient weeknight dinner. Tender chicken simmers in a sweet and tangy sauce, perfect for busy families and meal prepping.

  • 2 lbs (900 g) chicken thighs, bone-in, skinless, halal-certified
  • 3 Tbsp (45 ml) Dijon mustard
  • 2 Tbsp (30 ml) whole grain mustard
  • 3 Tbsp (45 ml) raw honey
  • 1 Tbsp (15 ml) apple cider vinegar
  • 2 cloves garlic, minced (≈1 tsp / 5 g)
  • 1 medium onion, diced (≈150 g / 1 cup)
  • 1 tsp (5 g) smoked paprika
  • ½ tsp (2.5 g) black pepper
  • 1 tsp (5 g) sea salt
  • 1 Tbsp (15 ml) olive oil
  • ½ cup (120 ml) low-sodium vegetable broth
  • 1 tsp (5 g) cornstarch + 2 tsp (10 ml) water
  • 2 Tbsp (≈6 g) parsley, chopped
  • 1 tsp (2 g) lemon zest

Instructions

  1. Prepare Chicken: Season chicken thighs with salt, pepper, and paprika.
  2. Sear Chicken: Sear chicken in olive oil for 3-4 minutes per side.
  3. Sauté Aromatics: Sauté onion and garlic until softened.
  4. Deglaze Pan: Add broth and scrape up browned bits.
  5. Make Sauce: Combine mustard, honey, vinegar, and lemon zest.
  6. Combine & Crockpot: Pour sauce over chicken in crockpot.
  7. Slow Cook: Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  8. Thicken Sauce: Stir in cornstarch slurry and cook for 15 minutes.
  9. Rest & Serve: Let chicken rest before serving.

Notes

Searing the chicken adds significant flavor. Adjust honey to control sweetness. Bone-in, skinless thighs stay moistest.
