  • 2 Tbsp (30ml) olive oil: For searing
  • 4 cloves garlic, minced: Freshly minced
  • ½ cup (120ml) low-sodium chicken broth: Adds moisture
  • ½ cup (120ml) heavy cream: For a creamy sauce
  • ½ cup (120g / 4oz) Parmesan cheese: Freshly grated
  • ⅓ cup (50g / 1.75oz) sun-dried tomatoes, chopped: Oil-packed, drained
  • 1 tsp (5g) smoked paprika: Adds smoky flavor
  • 1 tsp (5g) dried oregano: Classic Italian herb
  • ½ tsp (2.5g) red pepper flakes (optional): For heat
  • Salt and pepper, to taste
  • 1 Tbsp (15ml) lemon juice (optional): Brightens the sauce
  • 2 Tbsp (8g / 0.3oz) parsley, chopped: For garnish

Instructions

  1. Sear Chicken: Season chicken with paprika, oregano, salt, and pepper. Sear in olive oil until golden-brown.
  2. Sauté Aromatics: Sauté garlic and sun-dried tomatoes in the same skillet.
  3. Deglaze Pan: Add chicken broth and scrape up browned bits.
  4. Combine in Crockpot: Add broth mixture to chicken in crockpot.
  5. Add Cream & Parmesan: Stir in cream, Parmesan, and optional red pepper flakes and lemon juice.
  6. Slow Cook: Cook on low for 4-5 hours or high for 2-3 hours until chicken reaches 75°C (165°F).
  7. Adjust Seasoning: Taste and adjust seasoning as needed.
  8. Rest & Serve: Let chicken rest before slicing (optional).
