  • 800 g (1.75 lb) Baby Potatoes, Halved
  • 4 Cloves Garlic, Minced
  • 60 ml (1/4 cup) Olive Oil
  • 120 ml (1/2 cup) Low-Sodium Chicken Broth
  • 60 g (2 oz) Parmesan Cheese, Grated
  • 30 g (2 Tbsp) Butter, Cut into Pieces
  • 1 tsp (5 ml) Dried Oregano
  • 1 tsp (5 ml) Dried Thyme
  • 0.5 tsp (2.5 ml) Smoked Paprika
  • 0.5 tsp (2.5 ml) Black Pepper
  • 1 tsp (5 ml) Sea Salt
  • 1 Lemon, Zest (Optional)
  • 2 Tbsp (30 ml) Parsley, Chopped
  • 1 tsp (5 ml) Lemon Juice (Optional)

Instructions

  1. Season Chicken: Season chicken thighs with salt, pepper, oregano, thyme, and paprika.
  2. Layer Crockpot: Arrange chicken and potatoes in the crockpot.
  3. Make Sauce: Whisk garlic, oil, broth, lemon zest (if using), and butter.
  4. Combine & Season: Pour sauce over chicken and potatoes, sprinkle with Parmesan.
  5. Slow Cook: Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  6. Thicken Sauce: If needed, cook uncovered on HIGH for 10-15 minutes.
  7. Final Touches: Adjust seasoning and rest for 5 minutes.

Notes

For best results, use freshly grated Parmesan cheese. A splash of lemon juice brightens the flavors.
