Description

These Easy Ground Beef & Sweet Potato Bowls are a flavorful and healthy weeknight dinner option, combining roasted sweet potatoes with a spiced ground beef base and creamy tahini sauce.


Ingredients

  • 400g (14oz) Ground Beef (Halal-Certified)
  • 500g (1.1lb) Sweet Potatoes
  • 1 Tbsp (15ml) Olive Oil
  • 1 Small Red Onion
  • 2 Cloves Garlic
  • 1 tsp (5g) Ground Cumin
  • 1 tsp (5g) Smoked Paprika
  • ½ tsp (2g) Ground Coriander
  • ¼ tsp (1g) Cayenne Pepper (Optional)
  • Salt and Pepper to taste
  • 200g (7oz) Canned Black Beans
  • 100g (3½oz) Frozen Corn Kernels
  • 1 tsp (5g) Harissa Paste
  • 2 Tbsp (30ml) Tahini
  • 1 Tbsp (15ml) Lemon Juice
  • 1 tsp (5ml) Maple Syrup or Honey
  • 2 Tbsp (30ml) Water
  • 1 Ripe Avocado
  • 2 Tbsp (30g) Toasted Pumpkin Seeds
  • 2 Tbsp (30g) Chopped Cilantro
  • 1 Tbsp (15g) Pickled Red Onion (Optional)
  • 1 Lime Wedge

Instructions

  1. Prep Sweet Potatoes: Dice sweet potatoes, toss with oil, paprika, and salt.
  2. Roast Sweet Potatoes: Roast for 22-25 minutes, flipping halfway.
  3. Sauté Onion & Beef: Sauté onion, then brown ground beef with spices and harissa.
  4. Combine & Heat: Stir in beans and corn; heat through.
  5. Make Tahini Sauce: Whisk tahini, lemon juice, maple syrup, water, and salt.
  6. Assemble Bowls: Layer sweet potatoes, beef mixture, and avocado.
  7. Garnish & Serve: Drizzle with tahini sauce and garnish with seeds, cilantro, and lime.

Notes

Roasting sweet potatoes at a high temperature brings out their natural sweetness. Making tahini sauce ahead of time saves time during the week.
