These Easy Ground Beef & Sweet Potato Bowls are a flavorful and healthy weeknight dinner option, combining roasted sweet potatoes with a spiced ground beef base and creamy tahini sauce.

- 500g (1.1lb) Sweet Potatoes
- 1 Tbsp (15ml) Olive Oil
- 1 Small Red Onion
- 2 Cloves Garlic
- 1 tsp (5g) Ground Cumin
- 1 tsp (5g) Smoked Paprika
- ½ tsp (2g) Ground Coriander
- ¼ tsp (1g) Cayenne Pepper (Optional)
- Salt and Pepper to taste
- 200g (7oz) Canned Black Beans
- 100g (3½oz) Frozen Corn Kernels
- 1 tsp (5g) Harissa Paste
- 2 Tbsp (30ml) Tahini
- 1 Tbsp (15ml) Lemon Juice
- 1 tsp (5ml) Maple Syrup or Honey
- 2 Tbsp (30ml) Water
- 1 Ripe Avocado
- 2 Tbsp (30g) Toasted Pumpkin Seeds
- 2 Tbsp (30g) Chopped Cilantro
- 1 Tbsp (15g) Pickled Red Onion (Optional)
- 1 Lime Wedge
Instructions
- Prep Sweet Potatoes: Dice sweet potatoes, toss with oil, paprika, and salt.
- Roast Sweet Potatoes: Roast for 22-25 minutes, flipping halfway.
- Sauté Onion & Beef: Sauté onion, then brown ground beef with spices and harissa.
- Combine & Heat: Stir in beans and corn; heat through.
- Make Tahini Sauce: Whisk tahini, lemon juice, maple syrup, water, and salt.
- Assemble Bowls: Layer sweet potatoes, beef mixture, and avocado.
- Garnish & Serve: Drizzle with tahini sauce and garnish with seeds, cilantro, and lime.
Notes
Roasting sweet potatoes at a high temperature brings out their natural sweetness. Making tahini sauce ahead of time saves time during the week.
