- 1g (½tsp) ground cumin
- 250ml (1cup) low-sodium vegetable broth
- 240ml (1cup) heavy cream
- 15ml (1Tbsp) sun-dried tomato puree
- 15ml (1Tbsp) Dijon mustard
- 5ml (1tsp) lemon juice
- 15g (1Tbsp) Parmesan cheese
- 15g (1Tbsp) parsley, chopped
- 5g (1tsp) cornstarch mixed with 5ml (1tsp) water (optional)
Instructions
- Prepare Chicken: Season chicken thighs with salt and pepper.
- Sear Chicken: Sear chicken in olive oil for 4-5 minutes per side.
- Sauté Aromatics: Sauté onion, garlic, paprika, and cumin.
- Deglaze & Simmer: Add broth and scrape up browned bits.

- Combine & Cook: Return chicken to skillet and simmer until cooked through.
