Ingredients

Scale
  • 600g (1.3lb) Chicken Breast Halves: Sear to perfection for even sauce coverage.
  • 30ml (2 tbsp) Olive Oil: For searing, provides a golden-brown crust.
  • 30g (2 tbsp) Unsalted Butter: Adds richness and controls saltiness.
  • 150g (1 cup) Onion, Diced: Forms the aromatic base of the sauce.
  • 15g (1 tbsp) Garlic, Minced (about 3 cloves): Adds a pungent, savory flavor.
  • 2g (1 tsp) Smoked Paprika: Adds smoky depth.
  • 2g (1 tsp) Dried Oregano: A classic Mediterranean herb.
  • 1g (½ tsp) Cayenne Pepper (optional): For a touch of heat.
  • 200ml (⅞ cup) Chicken Stock: Provides the liquid base.
  • 120ml (½ cup) Heavy Cream: Creates a creamy, luxurious texture.
  • 100g (3½ oz) Sun-Dried Tomatoes, Chopped: Adds sweet and tangy flavor.
  • 15ml (1 tbsp) Lemon Juice: Brightens the sauce.
  • Salt and Pepper to Taste: Essential for seasoning.
  • 10g (¼ cup) Fresh Basil Leaves, Torn: A vibrant garnish.
  • 1g (½ tsp) Lemon Zest: Adds citrus aroma.
  • 15g (1 tbsp) Toasted Almonds: Provides crunch and nutty flavor.

Instructions

  1. Prepare Chicken: Pat chicken dry and season with salt, pepper, paprika, oregano, and cayenne.
  2. Sear Chicken: Sear chicken in olive oil for 4-5 minutes per side, until golden brown and cooked through. Rest before slicing.
  3. Sauté Aromatics: Sauté onion in butter until translucent, then add garlic and cook until fragrant.
  4. Build Flavor Base: Stir in sun-dried tomatoes and deglaze the pan with chicken stock. Simmer to reduce.
  5. Create Creamy Sauce: Whisk in heavy cream and lemon juice, simmer until thickened. Season to taste.
  6. Combine & Finish: Return chicken to skillet, coat with sauce, and simmer for 2 minutes.

Notes

For best results, use oil-packed sun-dried tomatoes and don’t overcook the chicken. Adjust cayenne pepper to your spice preference.
