- 500g (1.1lb) Chicken Thighs: cubed, marinated in spices
- 300g (10.5oz) Zucchini: sliced into half-moons
- 150g (5.3oz) Red Bell Pepper: diced
- 150g (5.3oz) Cherry Tomatoes: halved
- 70g (2.5oz) Kalamata Olives: pitted and halved
- 3 Cloves Garlic: minced
- 1 tbsp (15ml) Olive Oil: for roasting and marinade
- 1 tsp (5g) Smoked Paprika: for smoky flavor
- 1 tsp (5g) Dried Oregano: classic Mediterranean herb
- 0.5 tsp (2.5g) Ground Cumin: warm, earthy flavor
- 0.25 tsp (1.3g) Red-Pepper Flakes: optional, for heat
- Salt and Pepper: to taste
- 100g (3.5oz) Feta Cheese: crumbled
- 2 tbsp (30ml) Lemon Juice: for brightness
- Zest of 1 Lemon: for citrus aroma
- 2 tbsp (30g) Parsley: chopped, for garnish
- 1 tbsp (15g) Pine Nuts: toasted, for garnish
Instructions
- Prepare Oven & Dish: Preheat oven to 200°C (400°F) and grease a baking dish.
- Marinate Chicken: Combine chicken with olive oil, paprika, oregano, cumin, salt, and pepper.
- Arrange Bake: Spread chicken in dish, arrange vegetables around it.
- Infuse with Citrus: Drizzle with lemon juice and sprinkle with lemon zest.
- Roast to Perfection: Roast for 25-30 minutes, until chicken is cooked through.
- Add Feta: Crumble feta over the hot bake and let sit for 5 minutes.
- Garnish & Serve: Sprinkle with parsley and pine nuts, drizzle with olive oil, and serve.
Notes
Marinating the chicken ahead of time (up to 24 hours) enhances flavor. Ensure zucchini slices aren’t too thick to prevent sogginess.
