These easy egg bites with cottage cheese are a perfect, nutritious make-ahead breakfast for busy mornings, offering crispy edges and a creamy center.

- 6 large eggs (300 g)
- 250 g (1 cup) full-fat cottage cheese, well-drained (Try ricotta or Greek yogurt for a different texture)
- 60 ml (0.25 cup) milk (any kind) (Any dairy or non-dairy milk works)
- 60 g (0.5 cup) shredded cheese (cheddar, Monterey Jack) (Swiss or provolone are also great)
- 150 g (approx. 0.5 cup) jarred roasted red peppers, drained and finely diced (Or use spinach, bell peppers, or onions)
- 10 g (2 teaspoons) Za’atar Spice Blend
- 15 ml (1 tablespoon) Extra Virgin Olive Oil
- 3 g (0.5 teaspoon) Fine Sea Salt
- 1 g (0.25 teaspoon) Freshly Ground Black Pepper
- 4 g (1 teaspoon) Baking Powder
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 175 C (350 F) and lightly grease a standard 12-cup muffin tin or line it with silicone molds.
- Combine Wet Ingredients and Seasonings: In a large bowl, whisk together the eggs, well-drained cottage cheese, milk, olive oil, baking powder, salt, pepper, and Za’atar until just combined and smooth.
- Gently Fold In Additions: Add the shredded cheese, finely diced roasted red peppers, and any other chosen diced vegetables or cooked lean proteins. Ensure they are evenly distributed.
- Fill Muffin Cups: Pour the mixture into the prepared muffin cups, filling each approximately two-thirds to three-quarters full.
- Bake Until Golden and Set: Bake for 18-22 minutes, or until the egg bites are set, lightly golden around the edges, and feel firm to the touch in the center.
Notes
Substitutions for cottage cheese include ricotta or Greek yogurt; for milk, any dairy or non-dairy works; and for roasted red peppers, spinach, bell peppers, or onions. Silicone molds help with easy release. Don’t overfill muffin cups. For a low-carb version, ensure your milk is unsweetened.
