Description
This recipe provides a quick and satisfying homemade egg McMuffin, perfect for a wholesome breakfast faster than a drive-thru. It guides you through creating iconic breakfast sandwiches with toasted muffins, savory Canadian bacon, melty cheese, and perfectly cooked eggs.
Ingredients
- 2 English muffins, whole wheat (split horizontally)
- 2 large eggs, fresh and organic
- 2 slices Canadian bacon (1.7 oz / 50 g, or thinly sliced deli ham)
- 2 slices American cheese (1.4 oz / 40 g, or cheddar)
- 1 tablespoon (15 ml) unsalted butter (or olive oil)
- Pinch sea salt
- Pinch freshly ground black pepper
Instructions
- Prep Ingredients: Lightly butter or oil English muffin halves. If using, lightly grease two round egg rings (about 3 inches diameter).
- Toast English Muffins: Preheat a 10-inch non-stick skillet over medium heat. Place muffin halves, cut-side down, in the dry skillet or a toaster until golden brown and slightly crispy (about 2 minutes per side). Set aside to keep warm.
- Cook Canadian Bacon: In the same skillet over medium heat, quickly warm the Canadian bacon slices for about 1 minute per side until lightly browned and fragrant. Remove and set aside.
- Cook Eggs: Place greased egg rings into the still-warm skillet (add a tiny drop of oil if needed). Crack one egg into each ring. Season lightly with salt and black pepper. Cook for 2-3 minutes, or until the whites are set and the yolk is cooked to your liking.
- Assemble Sandwich: Place the bottom half of an English muffin on a plate. Immediately top with a warm slice of cheese. Carefully place a cooked egg on top, then add a slice of Canadian bacon. Cover with the top half of the English muffin and serve immediately.
Notes
Experiment with different cheeses (provolone, Monterey Jack) or protein boosts (sausage patties, turkey bacon). Add fresh spinach or finely diced bell peppers for extra nutrition. If you do not have egg rings, use a wide-mouth mason jar lid with the center removed, a metal cookie cutter, or fold scrambled eggs to fit. Avoid overcooking eggs by using low-medium heat for desired yolk consistency. For quicker batch cooking, cook multiple eggs on a larger griddle or in a muffin tin.
