Description

  • 7 oz drained and chopped kimchi
  • 5 oz green cabbage, finely shredded
  • 3.5 oz carrots, finely grated
  • 1 tablespoon toasted sesame oil
  • 1 green onion (white and light green parts separated, dark green parts reserved for garnish)
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 2 oz softened cream cheese
  • 18 to 20 egg roll wrappers
  • Water (for sealing)
  • Vegetable oil spray
  • Toasted sesame seeds (for garnish)

Instructions

  1. Sauté Aromatics and Vegetables: Heat 1 teaspoon of sesame oil in a large skillet over medium-high heat. Add the white and light green parts of the sliced green onion, garlic, and ginger; sauté for 1-2 minutes until fragrant. Add the shredded cabbage and carrots; cook for 3-5 minutes, stirring frequently, until slightly softened.
  2. Prepare Creamy Filling: Add the shredded cooked chicken, chopped kimchi, gochujang, and soy sauce to the skillet. Stir well to combine. Reduce heat to low and add the softened cream cheese. Stir continuously until the cream cheese is fully melted and integrated into the filling mixture.
  3. Cool Filling Mixture: Remove the filling from heat and allow it to cool for 10-15 minutes before assembling the egg rolls.
  4. Assemble Egg Rolls: Lay an egg roll wrapper in a diamond shape. Place about 2-3 tablespoons of the cooled filling in a horizontal line across the center. Fold the bottom corner over the filling, then fold in the left and right corners towards the center. Roll tightly from the bottom upward, sealing the top corner with a dab of water.
  5. Air Fry for Crispy Perfection: Preheat your air fryer to 375°F (190°C). Spray the assembled egg rolls lightly with vegetable oil spray on all sides. Place 3-4 egg rolls in a single layer in the air fryer basket.
  6. Finish Cooking and Garnish: Air fry for 10-12 minutes, flipping halfway through, until golden brown and visibly crispy. Repeat with remaining egg rolls. Serve immediately with a garnish of toasted sesame seeds and sliced green onions.

Notes

Ensure the filling is completely cooled before wrapping to prevent splitting. Do not crowd the air fryer basket for optimal crispness. Reheat leftovers in the air fryer, not the microwave, to maintain texture.
