  • 1 tbsp (15 ml) neutral oil (like canola or avocado, for cooking; a high smoke point is best)

Instructions

  1. Prep Your Ingredients: Trim the root ends off the enoki mushrooms, separating them into smaller, manageable clusters. Slice scallions, keeping the white and green parts separate.
  2. Heat Your Pan: In a large 12-inch skillet or wok, heat 1 tbsp neutral oil over medium-high heat until it shimmers lightly.
  3. Sauté Scallions: Add the white parts of the scallions to the pan and stir-fry for about 30 seconds until fragrant and slightly softened.
  4. Add Enoki: Add the prepared enoki mushrooms to the hot pan. Cook for 2-3 minutes, tossing gently with tongs, until they soften and release some moisture. (If they start to stick, add another teaspoon of neutral oil.)
  5. Stir in Flavor: Reduce heat to medium. Carefully add the chili-garlic sauce, soy sauce, and toasted sesame oil. If using, sprinkle in a pinch of sugar. Toss everything together to coat the mushrooms evenly.
