This homemade kale tonic delivers a vibrant, healthy start to your morning. The recipe uses a high-speed blender for a smooth base and adds a creamy coconut-lime swirl for a delicious twist on the classic First Watch version.

- 150g fresh kale leaves (5 oz), tough stems removed
- 1 medium Granny Smith apple (200g / 7 oz), cored and chopped
- 200g English cucumber (7 oz), roughly chopped
- 3 tablespoons fresh lemon juice (45 ml)
- 1 inch piece fresh ginger (2.5 cm), peeled and chopped
- 1/2 cup filtered water (120 ml), plus more as needed
- 1/2 cup full-fat coconut cream (120 ml), chilled from a can
- 1 tablespoon fresh lime juice (15 ml)
- 1/2 teaspoon finely grated lime zest
- 1 teaspoon pure maple syrup (5 ml)
- Lime wheels (for garnish)
Instructions
- Prepare Ingredients: Wash all produce thoroughly. Remove the tough center stems from the kale leaves and core the apple. Peel and chop the fresh ginger. Gather all ingredients and ensure the coconut cream can is thoroughly chilled.
- Blend Kale Tonic Base: Combine the prepared kale, chopped apple, cucumber, lemon juice, ginger, and 1/2 cup of water in a high-speed blender. Blend for 60-90 seconds until completely smooth. Add a tablespoon or two more water if needed to reach a pourable consistency.
- Strain for Smooth Texture: Pour the blended mixture through a fine-mesh sieve or nut milk bag into a clean container or pitcher. Press down on the pulp with a spoon to extract as much liquid as possible, then discard the dry pulp. Chill the strained tonic in the refrigerator for at least 30 minutes.
- Prepare Coconut-Lime Swirl: In a small bowl, combine the chilled coconut cream, fresh lime juice, lime zest, and maple syrup. Whisk until the mixture is completely smooth and thick.
- Assemble and Serve: Pour the chilled green kale tonic into two tall glasses. Gently drizzle the coconut-lime swirl mixture over the top surface of each drink. Use a small spoon or skewer to create light swirls or ribbons. Garnish with a lime wheel on the rim and extra lime zest. Serve immediately.
Notes
For a smoother texture, ensure kale stems are removed before blending. For meal prep, store the strained tonic base and the swirl separately in the refrigerator for up to 3 days, then combine just before serving. To separate coconut cream from liquid, chill the can overnight before opening.
