- 600g (1.3lb) Chicken Breast: Cut into 1cm (½ inch) thick rounds.
- 30ml (2 Tbsp) Honey + 1 Tbsp (for glaze)
- 60ml (2 fl oz) Lime Juice (about 2 limes) + Zest of 1 Lime
- 15ml (1 Tbsp) Olive Oil
- 2 Cloves Garlic, Minced
- 5g (1 tsp) Ginger, Grated
- 15ml (1 Tbsp) Low-Sodium Soy Sauce
- 2g (½ tsp) Smoked Paprika
- 1g (¼ tsp) Ground Cumin
- Pinch of Salt and Pepper
- 120g (½ cup) Greek Yogurt
- 1 tsp Toasted Sesame Seeds
- 2 Tbsp Cilantro (optional)
- ½ cup Microgreens
- 1 Leaf Butter Lettuce
Instructions
- Marinate Chicken: Combine honey, lime juice, zest, oil, garlic, ginger, soy sauce, paprika, cumin, salt, and pepper. Marinate chicken for at least 30 minutes.
- Sear Chicken: Heat skillet with marinade, sear chicken for 2 minutes per side until browned.
- Bake Chicken: Bake at 200°C (400°F) for 8-10 minutes, until cooked through.
- Make Sauce: Combine yogurt, lime zest, and juice; season with salt.
- Glaze & Rest: Drizzle with honey and rest for 5 minutes.
- Assemble Stack: Layer lettuce, chicken, yogurt sauce, and repeat.
- Garnish & Serve: Drizzle with glaze, sprinkle with sesame seeds and cilantro, and arrange microgreens.
Notes
Allowing the chicken to rest after baking helps retain moisture. Adjust lime juice in yogurt sauce for desired thickness.
