Ingredients
- All-Purpose Flour (200g / 1 cup)
- Granulated Sugar (150g / ¾ cup + 100g / ½ cup for glaze)
- Baking Powder (1 tsp / 5g)
- Baking Soda (½ tsp / 2.5g)
- Salt (¼ tsp / 1g + ½ tsp sea salt for glaze)
- Unsalted Butter (100g / ½ cup + 30g / 2 tbsp for glaze)
- Large Eggs (2)
- Whole Milk (120ml / ½ cup)
- Alcohol-Free Vanilla Extract (1 tsp / 5ml)
- Fresh Peach Slices (250g / 1⅔ cups + 2 tbsp / 30ml peach puree for glaze)
- Heavy Cream (or Coconut Cream) (60ml / ¼ cup)
- Sliced Almonds, Toasted (30g / ¼ cup)
Instructions
- Preheat and Prepare: Preheat oven to 175°C (350°F) and grease/line a 9-inch round cake pan.
- Combine Dry Ingredients: Whisk flour, baking powder, baking soda, and salt.
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy.
- Add Eggs & Vanilla: Incorporate eggs one at a time, then stir in vanilla.
- Alternate Wet & Dry: Gradually add dry ingredients alternating with milk, beginning and ending with dry.
- Fold in Peaches: Gently fold in peach slices.
- Bake to Perfection: Pour into pan and bake for 30-35 minutes.
- Cool Completely: Cool in pan for 10 minutes, then invert onto a rack.
- Make Caramel Glaze: Melt sugar, stir in butter, cream, puree, and salt.
- Glaze & Garnish: Drizzle glaze over cake and sprinkle with almonds.
Notes
For best results, use ripe but firm peaches. Toasting almonds enhances their flavor. Don’t overmix the batter to avoid a tough cake.
