- Coat Bananas: In a shallow dish, combine 0.5 cup all-purpose flour and 2 tablespoons granulated sugar. Dredge each banana slice in this mixture, shaking off any excess, to achieve a crisp exterior.
- Heat Oil: Heat 0.5 cup neutral vegetable oil in a large non-stick skillet over medium-high heat until it shimmers (about 3 minutes).
- Fry Bananas: Carefully add the coated banana slices in a single layer to the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side until deeply golden brown and caramelized. Transfer to a paper towel-lined plate to drain excess oil and keep warm.
- Prepare Spiced Coconut Caramel: In a small saucepan, combine 0.75 cup + 2 tablespoons full-fat coconut milk, 0.5 cup granulated sugar, 0.5 teaspoon ground cardamom, 0.25 teaspoon ground cinnamon, and 0.25 teaspoon fine sea salt. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar.
- Thicken Caramel: Reduce heat to medium-low and simmer, stirring frequently, for 10-12 minutes until the caramel thickens to a syrupy consistency and lightly coats a spoon. Remove from heat and stir in 0.5 teaspoon alcohol-free vanilla extract.
