Description

This fried banana recipe offers crispy edges and a creamy center, radiating warmth with every bite. It’s an easy, family-friendly dessert ready in minutes, featuring a spiced coconut caramel sauce.

Ingredients

Scale
  • 4 medium ripe, firm dessert bananas, approx. 500 g
  • 0.5 cup all-purpose flour
  • 2 tablespoons granulated sugar, divided (for coating)
  • 0.5 cup neutral vegetable oil, for frying
  • 0.75 cup + 2 tablespoons full-fat coconut milk
  • 0.5 cup granulated sugar (for caramel)
  • 0.5 teaspoon ground cardamom
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon fine sea salt
  • 0.5 teaspoon alcohol-free vanilla extract
  • 1 tablespoon toasted black sesame seeds
  • 0.25 teaspoon flaky sea salt, for garnish

Instructions

  1. Prep Bananas: Peel the bananas and slice them diagonally into approximately 1.5 cm (0.6 inch) thick oval pieces for even cooking.
  2. Coat Bananas: In a shallow dish, combine 0.5 cup all-purpose flour and 2 tablespoons granulated sugar. Dredge each banana slice in this mixture, shaking off any excess, to achieve a crisp exterior.
  3. Heat Oil: Heat 0.5 cup neutral vegetable oil in a large non-stick skillet over medium-high heat until it shimmers (about 3 minutes).
  4. Fry Bananas: Carefully add the coated banana slices in a single layer to the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side until deeply golden brown and caramelized. Transfer to a paper towel-lined plate to drain excess oil and keep warm.
  5. Prepare Spiced Coconut Caramel: In a small saucepan, combine 0.75 cup + 2 tablespoons full-fat coconut milk, 0.5 cup granulated sugar, 0.5 teaspoon ground cardamom, 0.25 teaspoon ground cinnamon, and 0.25 teaspoon fine sea salt. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar.
  6. Thicken Caramel: Reduce heat to medium-low and simmer, stirring frequently, for 10-12 minutes until the caramel thickens to a syrupy consistency and lightly coats a spoon. Remove from heat and stir in 0.5 teaspoon alcohol-free vanilla extract.
  7. Plate and Serve: Arrange 4-5 warm fried banana slices on a plate. Drizzle generously with the warm Spiced Coconut Caramel. Sprinkle with 1 tablespoon toasted black sesame seeds and 0.25 teaspoon flaky sea salt for garnish.

Notes

Ensure bananas are ripe but firm to prevent mushiness; avoid overcrowding the pan and maintain medium heat for even browning. For a dairy-free option, coconut oil can be used for frying, and for gluten-free, swap flour for a GF blend. Toasted coconut flakes make a great tropical addition.
