- 0.5 cup (120 ml) full-fat coconut milk
- 2 Tbsp (25g) granulated sugar
Instructions
- Prepare Plantains: Peel ripe plantains, then slice diagonally into 0.5-inch (1.25 cm) thick pieces.
- Heat Oil: In a large 10-inch skillet or cast-iron pan, heat coconut oil over medium-high heat until shimmering (about 2 minutes).
- Fry Plantains: Carefully add plantain slices in a single layer (in two batches). Cook for 3-4 minutes per side until deeply golden brown and caramelized.
- Drain Plantains: Transfer fried plantains to a paper towel-lined plate to drain any excess oil.
- Prepare Drizzle: While plantains cool slightly, whisk together full-fat coconut milk, lime zest, lime juice, and granulated sugar in a small bowl until smooth.
- Serve Dish: Arrange fried plantains on a platter, drizzle generously with the creamy lime sauce, and serve warm.
Notes
For best results, use perfectly ripe plantains with plenty of black spots and good quality virgin coconut oil. Don’t overcrowd the pan when frying; cook in batches. Whisk the drizzle vigorously to ensure it doesn’t separate. Store leftovers in an airtight container for up to 3 days.
