Instructions

  1. Make Seasoning Blend: In a small bowl, combine smoked paprika, chipotle powder, maple sugar, garlic powder, onion powder, dried thyme, sea salt, black pepper, and optional cayenne pepper. Whisk thoroughly until well combined. Store any extra seasoning in an airtight container for future use.
  2. Prepare Potatoes: Wash and thoroughly dry the potatoes. Cut them lengthwise into uniform 1 cm thick fries. Preheat oven to 425°F (220°C) for baking, or set up a deep fryer to 350°F (175°C).
  3. Cook Fries (Oven Method): Toss the cut potatoes with oil until lightly coated. Spread them in a single layer on a parchment-lined baking sheet, avoiding crowding. Bake for 25-35 minutes, flipping halfway through, until crispy and golden brown on the edges.
  4. Cook Fries (Deep Fryer Method): Fry the potatoes in batches at 350°F (175°C) for 5-7 minutes until cooked through. Remove and drain on a wire rack. Increase fryer temperature to 375°F (190°C), then return fries to fryer for 2-4 minutes until deeply golden and crispy. Drain well.
  5. Season Hot Fries: Immediately transfer the hot, cooked fries to a large mixing bowl. Sprinkle generously with 2-3 tablespoons of the prepared seasoning blend and toss vigorously to ensure an even coating. The heat from the fries will create a glaze with the maple sugar.
