  • 1 teaspoon (5 ml) pure vanilla extract (or pure vanilla bean paste)

Instructions

  1. Combine Dry Ingredients: In a medium heavy-bottomed saucepan, whisk together the granulated sugar, unsweetened cocoa powder, and fine sea salt until thoroughly combined, breaking up any visible lumps.
  2. Add Wet Ingredients: Gradually whisk in the whole milk until the mixture is smooth, then add the cubed unsalted butter. Stir until the butter cubes are largely submerged in the liquid.
  3. Heat And Whisk: Place the saucepan over medium heat. Continue to whisk constantly until the butter is completely melted and the mixture just begins to come to a gentle simmer, showing small bubbles around the edges (approx. 5-7 minutes).
  4. Simmer And Thicken: Reduce the heat to low. Continue to simmer, whisking frequently, for 5-7 minutes until the sauce visibly thickens and coats the back of a spoon, gaining a lovely sheen. If it looks too thin, continue stirring gently for 2-3 more minutes over low heat; do not boil vigorously.
