Ingredients

Instructions
- Prep Vegetables: Dice garden vegetables into uniform pieces. Mince garlic if using. Consistent sizing helps even cooking.
- Sauté Vegetables: Heat olive oil in a 10-inch oven-safe skillet on medium heat. Sauté hard vegetables (onions, peppers) until softened (5-7 mins). Add greens, cook until wilted (2-3 mins). Season vegetables. (If dry, splash water.)
- Whisk Eggs: In a large bowl, whisk eggs, milk or cream, salt, and black pepper until light yellow and frothy. Stir in half of the shredded cheese.
