Description

This Garden Vegetable Frittata is an easy, oven-baked recipe that transforms fresh garden vegetables into a healthy, hearty family meal. It promises a tender, flavorful center with perfectly golden edges and is suitable for busy weeknights or relaxed weekend brunches.

Ingredients

Scale
  • 10 large Eggs
  • 0.5 cup Milk or Cream
  • 1 cup Shredded Cheese
  • 3 cups Garden Vegetables, diced
  • 1 Tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. Prep Vegetables: Dice garden vegetables into uniform pieces. Mince garlic if using. Consistent sizing helps even cooking.
  2. Sauté Vegetables: Heat olive oil in a 10-inch oven-safe skillet on medium heat. Sauté hard vegetables (onions, peppers) until softened (5-7 mins). Add greens, cook until wilted (2-3 mins). Season vegetables. (If dry, splash water.)
  3. Whisk Eggs: In a large bowl, whisk eggs, milk or cream, salt, and black pepper until light yellow and frothy. Stir in half of the shredded cheese.
  4. Combine And Pour: Spread the sautéed vegetables evenly in the skillet. Pour the egg mixture over the vegetables. Sprinkle the remaining cheese on top for a golden crust.
  5. Oven-Bake Frittata: Transfer the skillet to a preheated 375°F (190°C) oven. Bake until the frittata is set in the center and golden (20-25 mins). A knife inserted should come out clean.

Notes

To avoid overcooking, remove the frittata from the oven as soon as the center is set, preventing a rubbery texture. Season eggs generously with salt and pepper. Use pre-chopped frozen vegetables or pre-shredded cheese to save prep time. For healthier options, choose organic eggs, low-fat milk, and load up on extra non-starchy vegetables.
