- 680g (1.5 lb) chicken thighs, bone-in, skin-on
- 42g (3 Tbsp) butter, cubed
- 30ml (2 Tbsp) olive oil
- 4 garlic cloves, minced
- 5g (1 tsp) kosher salt
- 2.5g (½ tsp) black pepper
- 30ml (2 Tbsp) honey
- 5ml (1 tsp) lime juice
- 5g (1 tsp) chipotle powder
- 2.5g (½ tsp) smoked paprika
- Fresh cilantro, chopped, for garnish
- Lime zest, for garnish
Instructions
- Preheat Skillet: Preheat oven to 200°C (400°F) and heat skillet over medium-high heat.
- Sear Chicken: Pat chicken dry, season with salt and pepper, and sear skin-side down for 6-7 minutes until golden brown.
- Baste with Butter: Flip chicken, add butter and garlic, and spoon melted butter over chicken for 2 minutes.
- Make Glaze: Whisk together honey, lime juice, chipotle powder, and smoked paprika.
- Glaze and Roast: Pour glaze over chicken, toss to coat, and roast for 12-15 minutes until cooked through.
- Rest and Finish: Let rest for 3 minutes, then drizzle with pan juices.
- Garnish & Serve: Garnish with cilantro and lime zest.
