  • 1 tsp (2g) smoked paprika
  • ½ tsp (1g) red chili flakes
  • 1 tsp (1g) dried thyme
  • 1 tsp (5g) kosher salt
  • ½ tsp (2g) black pepper
  • Zest of 1 lemon (≈5g)
  • 2 tbsp (8g) parsley, chopped
  • 1 tbsp (15g) toasted almonds
  • Lemon wedges for serving

Instructions

  1. Prep Chicken & Preheat: Preheat oven to 200°C (400°F). Pat chicken dry.
  2. Season Generously: Combine spices and coat chicken thoroughly.
  3. Sear for Golden Skin: Sear chicken skin-side down for 4-5 minutes, then flip for 2 minutes.
  4. Infuse with Garlic Butter: Add butter, garlic, and lemon zest; baste chicken for 1-2 minutes.
  5. Roast to Perfection: Roast for 15-18 minutes, until internal temp reaches 74°C (165°F).
  6. Rest & Finish Sauce: Rest chicken for 5 minutes. Make sauce with parsley and almonds.
  7. Plate & Garnish: Plate chicken, drizzle with sauce, and garnish with lemon and almonds.
