- 2 tbsp (28g) unsalted butter
- 1 tbsp (15ml) olive oil
- 3 cloves (≈15g) garlic, minced
- 1 tsp (2g) smoked paprika
- ½ tsp (1g) red chili flakes
- 1 tsp (1g) dried thyme
- 1 tsp (5g) kosher salt
- ½ tsp (2g) black pepper
- Zest of 1 lemon (≈5g)
- 2 tbsp (8g) parsley, chopped
- 1 tbsp (15g) toasted almonds
- Lemon wedges for serving
Instructions
- Prep Chicken & Preheat: Preheat oven to 200°C (400°F). Pat chicken dry.
- Season Generously: Combine spices and coat chicken thoroughly.
- Sear for Golden Skin: Sear chicken skin-side down for 4-5 minutes, then flip for 2 minutes.
- Infuse with Garlic Butter: Add butter, garlic, and lemon zest; baste chicken for 1-2 minutes.
- Roast to Perfection: Roast for 15-18 minutes, until internal temp reaches 74°C (165°F).
- Rest & Finish Sauce: Rest chicken for 5 minutes. Make sauce with parsley and almonds.
- Plate & Garnish: Plate chicken, drizzle with sauce, and garnish with lemon and almonds.
