- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 120ml heavy cream
- 80g grated Parmesan cheese
- 60ml basil pesto
- 1 tsp lemon zest
- Salt and pepper to taste
- 2 tbsp toasted pine nuts
- 1 tbsp chopped parsley
Instructions
- Prepare the Steak: Pat steak dry and season with salt and pepper.
- Sear the Steak: Sear steak in hot oil for 2-3 minutes per side.
- Sauté the Garlic: Melt butter and sauté garlic until fragrant.
- Create the Cream Sauce: Return steak to skillet, add cream, and simmer for 2 minutes.
- Incorporate the Parmesan: Stir in Parmesan and lemon zest until melted.
- Swirl in the Pesto: Gently fold in pesto, creating swirls.
- Plate and Garnish: Plate steak, spoon sauce over, and garnish with pine nuts and parsley.
Notes
For best results, use a heavy-bottomed skillet like cast iron. Don’t overcrowd the pan when searing the steak.
