- 500g (1.1lb) Large Shrimp, Peeled and Deveined
- 2 Tbsp (30ml) Olive Oil
- 4 Cloves Garlic, Minced
- ¼ tsp (1g) Red Pepper Flakes
- 120ml (½ cup) Low Sodium Vegetable Broth
- 60ml (¼ cup) Fresh Lemon Juice
- 30g (2 Tbsp) Unsalted Butter, Cut into Pieces
- 1 Tbsp (15g) White Miso Paste
- 200g (7oz) Linguine or Spaghetti
- Salt and Pepper, to Taste
- 2 Tbsp (8g) Fresh Parsley, Chopped
- 1 tsp (2g) Lemon Zest
Instructions
- Cook Pasta: Boil pasta until al dente, reserving ½ cup pasta water.
- Prepare Shrimp: Pat shrimp dry and season with salt and pepper.
- Sear Shrimp: Sauté shrimp in olive oil until pink and opaque.
- Sauté Aromatics: Sauté garlic and red pepper flakes until fragrant.
- Deglaze & Reduce: Add broth and lemon juice, simmer for 2 minutes.
- Emulsify Sauce: Whisk in butter and miso paste until smooth.
- Combine & Finish: Return shrimp to skillet, add pasta and pasta water, toss to coat.
- Serve & Garnish: Plate and garnish with parsley and lemon zest.
Notes
For a creamy sauce, vigorously whisk while adding butter and use reserved pasta water. Don’t overcook the shrimp to avoid a rubbery texture.
