- 2 kg (4.4 lb) chicken thighs, bone-in, skin-on
- 6 cloves garlic, minced (≈30 g / 1 oz)
- 200 g (7 oz) Parmesan cheese, freshly grated
- 250 ml (1 cup) vegetable broth, low-sodium
- 120 ml (½ cup) heavy cream
- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) lemon juice, fresh
- 1 tsp (5 g) oregano, dried
- 1 tsp (5 g) thyme, dried
- ½ tsp (2.5 g) smoked paprika
- ½ tsp (2.5 g) black pepper
- 1 tsp (5 g) kosher salt
- ¼ tsp (1 g) red pepper flakes
- 1 tbsp (15 g) cornstarch mixed with 2 tbsp (30 ml) water
- 2 tbsp (10 g) parsley, chopped, fresh
- 1 tbsp (5 g) Parmesan cheese, grated
- 1 lemon, cut into wedges
Instructions
- Season Chicken: Combine salt, pepper, oregano, thyme, paprika, and red pepper flakes; season chicken.
- Sear Chicken: Sear chicken in olive oil, skin-side down, until golden brown.
- Sauté Garlic: Sauté minced garlic for 1 minute.
- Deglaze Pan: Add lemon juice and broth, scrape up browned bits.
- Combine in Crockpot: Pour garlic mixture over chicken.
- Add Cream & Parmesan: Stir in cream and 150g Parmesan.
- Slow Cook: Cook on LOW for 6 hours or HIGH for 3 hours.
- Thicken Sauce: Stir in cornstarch slurry; cook until thickened.
- Rest & Serve: Let rest, garnish with parsley, Parmesan, and lemon.
