- 800 g (1.75 lb) baby potatoes, halved
- 6 cloves garlic, minced (30 g / 1 oz)
- 100 g (3.5 oz) Parmesan cheese, grated
- 30 g (2 tbsp) butter, cut into pieces
- 2 tbsp (30 ml) olive oil
- 250 ml (1 cup) low-sodium vegetable broth
- 2 tsp (10 ml) lemon juice
- 2 tsp (5 g) dried thyme
- 1 tsp (2 g) dried rosemary
- 1 tsp (6 g) sea salt
- 0.5 tsp (2.5 g) black pepper
- 0.5 tsp (1 g) smoked paprika (optional)
- 15 g (½ cup) parsley, chopped
- Lemon zest, for garnish
Instructions
- Prepare Chicken: Season chicken thighs with salt, pepper, and paprika.
- Sear Chicken: Sear chicken in olive oil until golden-brown.
- Sauté Garlic: Melt butter and sauté garlic until fragrant.
- Layer Crockpot: Arrange potatoes in crockpot, sprinkle with thyme, rosemary, and salt.
- Assemble Dish: Add chicken to potatoes, pour in broth and lemon juice, then garlic butter.
- Add Parmesan: Sprinkle Parmesan cheese over the top.
- Slow Cook: Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Broil (Optional): Broil for 3-5 minutes for a golden crust.
- Rest & Serve: Let rest for 5 minutes, stir, and garnish.
