  • 60 g (1/4 cup) unsalted butter
  • 60 ml (1/4 cup) heavy cream
  • 1 tbsp (15 ml) strong brewed espresso
  • 60 g (1/2 cup) toasted chopped pecans
  • 0.5 tsp (2.5 g) flaky sea salt
  • 2 tbsp (30 g) toasted coconut flakes
  • a pinch of flaky sea salt

Instructions

  1. Preheat and Prepare: Preheat oven to 175°C (350°F) and grease a loaf pan.
  2. Cream Butter and Sugar: Cream butter and sugar until light and fluffy.
  3. Incorporate Eggs and Vanilla: Add eggs one at a time, then stir in vanilla.
  4. Combine Dry Ingredients: Whisk together flour, cocoa, baking powder, baking soda, and salt.
  5. Alternate Wet and Dry: Gradually add dry ingredients alternating with milk.
  6. Fold in Coconut and Pecans: Gently fold in coconut and pecans.
  7. Bake to Perfection: Bake for 55-65 minutes, or until a toothpick comes out clean.
