Description

This Greek Chicken Souvlaki Marinade creates incredibly tender and flavorful chicken skewers, perfect for grilling, baking, or pan-frying. It’s a simple way to bring the taste of the Mediterranean to your kitchen.


Ingredients

  • 800 g (1.75 lb) chicken thighs, cut into 2-inch cubes
  • 120 ml (1/2 cup) extra-virgin olive oil
  • 60 ml (1/4 cup) fresh lemon juice
  • 30 ml (2 Tbsp) red wine vinegar
  • 4 cloves garlic, minced
  • 2 tsp (10 ml) dried oregano
  • 1 tsp (5 ml) dried thyme
  • 1 tsp (5 ml) smoked paprika
  • 0.5 tsp (2.5 ml) ground cumin
  • 1 tbsp (15 ml) honey
  • 1 tsp (5 g) fine sea salt
  • 0.5 tsp (2.5 g) black pepper
  • Fresh parsley leaves, chopped (for garnish)
  • Lemon wedges (for garnish)

Instructions

  1. Prepare Chicken: Cut chicken into 2-inch cubes.
  2. Make Marinade: Whisk together olive oil, lemon juice, vinegar, garlic, oregano, thyme, paprika, cumin, honey, salt, and pepper.
  3. Marinate Chicken: Toss chicken with marinade, cover, and refrigerate for at least 2 hours, or overnight.
  4. Prepare Skewers: Soak wooden skewers in water for 30 minutes.
  5. Preheat Grill: Preheat grill to medium-high heat (400-450°F).
  6. Thread Chicken: Thread chicken onto skewers, leaving small gaps.
  7. Grill Souvlaki: Grill for 4-5 minutes per side, until cooked through (165°F).
  8. Rest & Serve: Let rest for 5 minutes before serving.

Notes

Marinating the chicken for longer (up to 24 hours) will result in more flavorful and tender souvlaki. Don’t overcrowd the skewers to ensure even cooking.
