  • 2 Tbsp chili garlic sauce

  • 2 cloves fresh garlic (finely minced)
  • 1 Tbsp olive oil

Instructions

  1. Prep the Wings: Pat the chicken wings extremely dry with paper towels to ensure crispy skin.
  2. Make the Lacquer: In a medium bowl, whisk together the honey, chili garlic sauce, soy sauce, lime juice, minced fresh ginger, and minced fresh garlic. Stir until thoroughly combined.
  3. Marinate: Place the dry wings into a large bowl or a sturdy zip-top bag. Pour about half of the Charred Honey-Chili Lacquer over the wings, tossing to coat evenly. Let marinate in the fridge for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat Grill: Heat your outdoor grill to a medium-high temperature, aiming for 400-450 degrees F (200-230 degrees C). Ensure the grill grates are clean and lightly oiled to prevent sticking.
  5. Grill the Wings: Arrange the marinated wings on the preheated grill in a single layer, leaving some space between each. Cook for 20-25 minutes, turning every 5-7 minutes, until they look golden brown and are cooked through to an internal temperature of 165 degrees F (74 degrees C).
  6. Glaze and Finish: During the last 5-7 minutes of grilling, baste the wings frequently with the remaining Charred Honey-Chili Lacquer. Continue turning them until the glaze is sticky, caramelized, and beautiful. For extra char, increase the heat slightly for the final minute or two.

Notes
