  • 2 tablespoons (30 ml) olive oil
  • 0.5 cup (50 g) Panko breadcrumbs (for gluten-free, use certified gluten-free Panko)
  • 0.25 cup (15 g) fresh cilantro, roughly chopped
  • 23 lime wedges, for serving
  • 2 cups (500 g) coarse rock salt, for serving

Instructions

  1. Prepare Crispy Garlic Crumble: In a small skillet, heat the olive oil over medium-low heat until shimmering. Add the thinly sliced garlic and fry gently until golden brown and crispy, about 5-7 minutes. Remove crispy garlic chips with a slotted spoon to a paper towel-lined plate to drain.
  2. Toast Panko: In the same skillet with the garlic-infused oil, add the Panko breadcrumbs. Toast over medium heat, stirring frequently, until golden brown and fragrant, about 3-4 minutes. Transfer to a small bowl, and once cool, gently mix in the crispy garlic chips. Season lightly with sea salt and pepper.
  3. Prepare Smoked Paprika-Lime Butter: In a small bowl, combine softened unsalted butter, smoked paprika, minced garlic, lime zest, fresh lime juice, sea salt, and black pepper. Mix thoroughly until well combined and creamy.
  4. Shuck Oysters: Carefully shuck the oysters using an oyster knife, discarding the top flat shell. Loosen the oyster meat from the bottom shell, ensuring it remains nestled in its cup with its natural liquor. Arrange on a baking sheet.
  5. Preheat Grill: Preheat a grill to medium-high heat (about 400F / 200C). Ensure the grill grates are clean and lightly oiled.
