- 1 tsp (5ml) Ground Cumin
- 1 tsp (5ml) Smoked Paprika
- 1L (4 cups) Low-Sodium Vegetable Broth
- 400g (14oz) Canned Diced Tomatoes (No Added Sugar)
- 200g (7oz) Roasted Red Peppers, Drained
- 2 tbsp (30ml) Olive Oil (For Puree)
- Salt and Pepper, to Taste
- Fresh Cilantro, Chopped (For Garnish)
- 1 tsp (5ml) Lime Juice (Optional)
Instructions
- Sauté Vegetables: Sauté onion, carrots, and celery in olive oil until softened.
- Brown Turkey: Add garlic and ground turkey; cook until browned.
- Add Spices: Season with cumin, smoked paprika, salt, and pepper.
- Simmer Soup: Add broth and tomatoes; simmer for 20-25 minutes.
- Make Swirl: Blend roasted red peppers, paprika, olive oil, and salt until smooth.
- Adjust Seasoning: Taste and adjust seasoning; add lime juice if desired.
- Serve: Ladle into bowls, swirl with red pepper purée, and garnish with cilantro.
