  • 1L (4 cups) Low-Sodium Vegetable Broth
  • 400g (14oz) Canned Diced Tomatoes (No Added Sugar)
  • 200g (7oz) Roasted Red Peppers, Drained
  • 2 tbsp (30ml) Olive Oil (For Puree)
  • Salt and Pepper, to Taste
  • Fresh Cilantro, Chopped (For Garnish)
  • 1 tsp (5ml) Lime Juice (Optional)

Instructions

  1. Sauté Vegetables: Sauté onion, carrots, and celery in olive oil until softened.
  2. Brown Turkey: Add garlic and ground turkey; cook until browned.
  3. Add Spices: Season with cumin, smoked paprika, salt, and pepper.
  4. Simmer Soup: Add broth and tomatoes; simmer for 20-25 minutes.
  5. Make Swirl: Blend roasted red peppers, paprika, olive oil, and salt until smooth.
  6. Adjust Seasoning: Taste and adjust seasoning; add lime juice if desired.
  7. Serve: Ladle into bowls, swirl with red pepper purée, and garnish with cilantro.
