Instructions

  1. Brown The Beef: In a large 5.5-quart Dutch oven, brown 1.5 lbs lean ground beef over medium-high heat. Break it up with a sturdy spoon until no pink remains and it’s nicely browned. Drain any excess fat.
  2. Saute Aromatics: Add 1 chopped onion, 2 minced garlic cloves, 2 chopped carrots, and 2 chopped celery stalks to the pot. Cook, stirring occasionally, until the vegetables soften and the onion becomes translucent.
  3. Build Flavor Base: Stir in 1 tsp dried thyme, 1 bay leaf, 1 tsp salt, and 0.5 tsp black pepper. Cook for about 1 minute, stirring constantly, until the spices are fragrant.
  4. Simmer The Stew: Pour in 4 cups beef broth and a 28 oz can Bright Tomato Chunks (undrained). Add 3 cups cubed potatoes. Bring to a gentle simmer, then reduce heat to low, cover, and cook until potatoes are fork-tender and the stew slightly thickens, approximately 25-30 minutes.
