Instructions

  1. Combine Sugar, Butter, and Milk: In a large, heavy-bottomed saucepan, combine 3 cups granulated sugar, 0.5 cup unsalted butter, and 1 can evaporated milk. Heat over medium heat, stirring constantly with a wooden spoon until the butter melts and the sugar fully dissolves, looking clear and glossy. Bring the mixture to a rolling boil, which should take about 5-7 minutes.
  2. Boil and Cook: Once it reaches a rolling boil (you’ll see large, continuous bubbles that don’t disappear when stirred), continue boiling vigorously for exactly 5 minutes, stirring occasionally to prevent sticking. (If it seems to be bubbling too aggressively and might scorch, reduce the heat slightly but maintain the rolling boil.) This specific boiling time is crucial for achieving that firm, classic hard fudge recipe texture.
  3. Remove from Heat & Add Flavors: Immediately remove the saucepan from the heat.
