- 2 Cloves Garlic, minced
- 5g (1 tsp) Ginger, grated
- 15ml (1 Tbsp) Cornstarch mixed with 30ml (2 Tbsp) Water
- 200g (7oz) Pineapple, cut into chunks
- 15ml (1 Tbsp) Vegetable Oil
- ½ tsp (2g) Red Pepper Flakes (optional)
- 5g (1 tsp) Sesame Seeds, toasted
- 30g (2 Tbsp) Scallion Greens, chopped
- 1 Lime, cut into wedges
Instructions
- Prepare Teriyaki Glaze: Combine soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger; simmer until dissolved.
- Thicken Glaze: Whisk in cornstarch slurry; cook until glossy.
- Divide Glaze: Separate glaze into two portions for marinating and basting.
- Marinate Chicken: Coat chicken thighs in one portion of glaze; refrigerate for 30-120 minutes.
- Sear Chicken: Sear chicken in hot oil until browned on both sides.
- Roast with Pineapple: Brush with remaining glaze; arrange pineapple around chicken; roast.
- Roast to Perfection: Roast until chicken reaches 74°C (165°F) and pineapple caramelizes.
