  • 15ml (1 Tbsp) Toasted Sesame Oil
  • 2 Cloves Garlic, minced
  • 5g (1 tsp) Ginger, grated
  • 15ml (1 Tbsp) Cornstarch mixed with 30ml (2 Tbsp) Water
  • 200g (7oz) Pineapple, cut into chunks
  • 15ml (1 Tbsp) Vegetable Oil
  • ½ tsp (2g) Red Pepper Flakes (optional)
  • 5g (1 tsp) Sesame Seeds, toasted
  • 30g (2 Tbsp) Scallion Greens, chopped
  • 1 Lime, cut into wedges

Instructions

  1. Prepare Teriyaki Glaze: Combine soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger; simmer until dissolved.
  2. Thicken Glaze: Whisk in cornstarch slurry; cook until glossy.
  3. Divide Glaze: Separate glaze into two portions for marinating and basting.
  4. Marinate Chicken: Coat chicken thighs in one portion of glaze; refrigerate for 30-120 minutes.
  5. Sear Chicken: Sear chicken in hot oil until browned on both sides.
  6. Roast with Pineapple: Brush with remaining glaze; arrange pineapple around chicken; roast.
  7. Roast to Perfection: Roast until chicken reaches 74°C (165°F) and pineapple caramelizes.
