Description

This Healthy Chicken Gyro Bowl offers the flavors of a traditional gyro without the pita, featuring lean chicken, fresh vegetables, and a creamy tzatziki sauce. It’s a quick and satisfying meal perfect for lunch or dinner.


Ingredients

  • 500 g (1.1 lb) chicken thighs: cut into 2 cm strips
  • 2 tbsp (30 mL) olive oil: divided
  • 1 tsp (5 mL) dried oregano
  • 1 tsp (5 mL) ground cumin
  • ½ tsp (2.5 mL) smoked paprika
  • ½ tsp (2.5 mL) garlic powder
  • ¼ tsp (1.25 mL) black pepper
  • ½ tsp (2.5 mL) sea salt: plus extra for quinoa
  • 2 tbsp (30 mL) lemon juice
  • 120 g (4 oz) quinoa
  • 240 mL (1 cup) water
  • 200 g (7 oz) Greek yogurt (full-fat)
  • 1 clove garlic: minced
  • 1 tbsp (15 mL) lemon juice (for sauce)
  • 1 tsp (5 mL) chopped fresh dill
  • ½ tsp (2.5 mL) sea salt (for sauce)
  • 200 g (7 oz) cucumber: diced
  • 150 g (5 oz) cherry tomatoes: halved
  • 50 g (1.8 oz) red onion: thinly sliced
  • 1 tbsp (15 mL) pomegranate molasses
  • 2 tbsp (30 mL) toasted pine nuts
  • 2 tbsp (30 mL) fresh mint leaves: torn
  • 1 tsp (5 g) sumac

Instructions

  1. Rinse Quinoa: Rinse quinoa thoroughly under cold water.
  2. Cook Quinoa: Combine quinoa, water, and salt; boil, then simmer covered for 15 minutes.
  3. Marinate Chicken: Whisk marinade ingredients; coat chicken and marinate for 15-30 minutes.
  4. Bake Chicken: Bake marinated chicken at 200°C (400°F) for 15-18 minutes.
  5. Prepare Vegetables: Dice cucumber, halve tomatoes, and slice red onion.
  6. Make Tzatziki: Combine yogurt, garlic, lemon juice, dill, and salt; refrigerate for 10 minutes.
  7. Assemble Bowls: Divide quinoa, arrange chicken and vegetables, and top with tzatziki.
  8. Finish & Serve: Drizzle with molasses, sprinkle with sumac, and garnish with pine nuts and mint.

Notes

For a richer tzatziki, use full-fat Greek yogurt and allow it to chill for at least 10 minutes to meld the flavors.
