Instructions
- Preheat & Prep: Preheat oven to 175°C (350°F) and grease/line a 23cm (9-inch) springform pan.
- Combine Dry: Whisk flour, baking powder, baking soda, and salt.
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy.
- Add Eggs & Flavor: Mix in eggs, vanilla, lemon zest, and juice.
- Alternate Wet & Dry: Gradually add dry ingredients and milk, beginning and ending with flour.
- Make Swirl: Beat cream cheese, powdered sugar, lavender, lemon juice, and milk until smooth.
- Assemble & Swirl: Spread batter in pan, drop swirl mixture, and gently swirl.
- Bake: Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool & Release: Cool in pan for 10 minutes before releasing and cooling completely.
- Candied Zest: Simmer sugar and water, add zest, and cook until translucent.
- Garnish & Serve: Dust with powdered sugar, scatter candied zest and lavender buds.
Notes
For a more tender crumb, use cake flour. Store in an airtight container at room temperature for up to 3-4 days.
