- 180g Ritz crackers
- 100g sharp cheddar cheese, shredded
- 100g cream cheese, softened
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh chives, chopped
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 large red bell pepper, roasted, peeled and seeded
- 1 tbsp extra-virgin olive oil
- ½ tsp lemon juice
- ¼ tsp smoked paprika
- 2 tbsp honey
- 2 tbsp toasted pumpkin seeds
- Optional: parsley leaves for garnish
Instructions
- Preheat & Prep: Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Make Coulis: Blend roasted red pepper, olive oil, lemon juice, paprika, and salt until smooth.
- Whip Cheese Mix: Combine cream cheese, cheddar, garlic, parsley, chives, salt, and pepper.
- Assemble Crackers: Spread cheese mixture onto Ritz crackers.
- Drizzle & Bake: Drizzle with red pepper coulis and bake for 8-10 minutes.
- Sweeten & Crunch: Drizzle with honey and sprinkle with pumpkin seeds.
- Garnish & Serve: Garnish with parsley and serve warm.
Notes
