- 2 Tbsp (30 ml) Honey
- 2 Tbsp (30 ml) Low-Sodium Soy Sauce
- 3 Cloves Garlic, minced
- 1 Tbsp (15 ml) Rice Vinegar
- 1 tsp (5 ml) Ginger, grated
- 1 Tbsp (15 ml) Vegetable Oil
- 250g (1 ¼ cup) Jasmine Rice
- 300 ml (1 ¼ cup) Water
- 2 Tbsp (30 ml) Tahini
- 1 Tbsp (15 ml) Lime Juice
- 1 tsp (5 ml) Honey (for drizzle)
- 1 tsp (5 ml) Toasted Sesame Oil
- 1 Tbsp (15g) Sesame Seeds, toasted
- 2 Scallions, sliced
- Pinch Red-Pepper Flakes (optional)
Instructions
- Cook the Rice: Rinse rice until water runs clear, then simmer with water for 15 minutes, rest for 5, and fluff.
- Marinate Chicken: Whisk honey, soy sauce, garlic, vinegar, and ginger. Marinate chicken for 15-30 minutes.
- Sear Chicken: Sear chicken in a skillet for 4-5 minutes per side, glazing with remaining marinade.
- Rest and Slice: Rest chicken for 3 minutes, then slice into strips.
- Make Drizzle: Whisk tahini, lime juice, honey, and sesame oil with water to desired consistency.
- Assemble Bowls: Layer rice, chicken, and drizzle.
- Garnish and Serve: Sprinkle with sesame seeds and scallions; add red pepper flakes if desired.
Notes
For best results, rinse the jasmine rice thoroughly to remove excess starch. Resting the chicken after searing allows the juices to redistribute, resulting in a more tender and flavorful dish.
