Ingredients
- 2 lbs fresh carrots
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh thyme leaves
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Prepare Carrots: Wash, peel, and chop 2 lbs of carrots into uniform 1-inch pieces.
- Season Carrots: In a large bowl (or directly on a baking sheet), combine chopped carrots, 2 tablespoons olive oil, 2 tablespoons honey, 1 tablespoon fresh thyme, 0.5 tsp salt, and 0.25 tsp pepper. Toss until well coated; add an extra 0.5 tablespoon olive oil if dry.
- Roast Carrots: Spread carrots in a single layer on a parchment-lined baking sheet. Roast at 400(degree)F (200(degree)C) for 20-30 minutes, tossing halfway, until edges are browned and carrots are fork-tender.
- Serve: Garnish with extra fresh thyme if desired.

Garnish with extra fresh thyme if desired. For a lower sugar option, reduce the honey to 1-2 tablespoons. Maple syrup or avocado oil can be used as substitutes. If the carrot mixture seems dry during seasoning, add an extra 0.5 tablespoon olive oil.
