Ingredients
Scale
- 1 (9-inch) unbaked pie crust
- 1 cup (200g) granulated sugar
- 0.5 cup (60g) all-purpose flour (or cornstarch)
- 2 cups (480ml) whole milk
- 0.5 cup (113g) unsalted butter
- 1 tsp (5ml) vanilla extract
- 0.5 cup (100g) butterscotch chips (or 1 tsp extract)
- 0.5 tsp (2.5ml) freshly grated nutmeg
- 0.25 tsp (1.25g) salt
- 1–2 Tbsp (12-24g) brown sugar
Instructions
- Prepare Crust: Gently press your pie crust into a 9-inch pie plate, shaping the edges decoratively. No blind baking is needed unless your crust instructions specify for a crisper base.
- Start Creamy Filling: In a medium saucepan, melt 0.5 cup (113g) butter over medium heat. Whisk in 1 cup (200g) granulated sugar and 0.5 cup (60g) all-purpose flour until smooth, forming a paste. Cook 1 minute, stirring constantly, until lightly golden.
- Add Dairy & Thicken: Gradually whisk in 2 cups (480ml) whole milk until smooth. Continue cooking over medium heat, stirring frequently, until the mixture visibly thickens, about 5-7 minutes, coating a spoon.
- Infuse Butterscotch Flavor: Remove from heat. Stir in 1 tsp (5ml) vanilla and 0.5 cup (100g) butterscotch chips (if using). Stir until chips melt and incorporate, creating the signature stripe. It will look glossy.
- Fill & Preheat Oven: Pour warm filling into your prepared 9-inch pie crust. Carefully transfer to a preheated oven at 375°F (190°C) for baking.
- Bake to Perfection: Bake for 30-40 minutes, until the crust is golden brown and the pie’s center is mostly set with a slight jiggle.
- Cool & Dust: Let the hoosier pie cool completely on a wire rack for at least 3-4 hours, until fully set. Before serving, dust generously with 0.5 tsp (2.5ml) freshly grated nutmeg for flavor.
Notes
No blind baking is needed unless specified by your crust. If the filling seems too thin, cook for an extra minute or two until visibly thickened. For stronger butterscotch flavor, use 1 tsp butterscotch extract instead of chips. Ensure the pie cools completely (at least 3-4 hours) for proper setting.
