  • 1 can (425g) refried beans
  • 2 Tbsp (30ml) vegetable oil
  • Salt, to taste
  • Fresh black pepper, to taste

Instructions

  1. Prepare Fresh Salsa: Dice tomatoes, red onion, cilantro, and jalapeño finely. Combine them in a bowl with 1 Tbsp (15ml) fresh lime juice. Season with salt and pepper to taste, then mix well.
  2. Warm Tortillas: Briefly heat corn tortillas in a dry skillet over medium heat for about 30 seconds per side until pliable. Alternatively, microwave them wrapped in a damp paper towel for 30-45 seconds. Keep them warm wrapped in a clean kitchen towel.
  3. Fry Eggs: Heat 1 Tbsp (15ml) vegetable oil in a lightly oiled skillet over medium heat. Fry eggs sunny-side up, over easy, or desired style. Cook until the whites are set and the yolks are runny or firm, typically 2-4 minutes per batch.
  4. Assemble Plate: Place two warm tortillas on a plate. Spoon a layer of warm refried beans (optional), then top each with a perfectly fried egg. Generously spoon your fresh salsa over the eggs, then finish with perfectly sliced avocado.
