  • 3g (0.5 tsp) garlic powder
  • 3g (0.5 tsp) onion powder
  • 4g (1 tsp) smoked paprika
  • 2g (0.5 tsp) ground cumin
  • 2g (0.5 tsp) dried thyme
  • 1 lemon, zest only
  • 10ml (2 tsp) honey
  • 5ml (1 tsp) Dijon mustard
  • 15ml (1 tbsp) lemon juice
  • 10g (2 tsp) fresh parsley, chopped
  • 5g (1 tsp) toasted sesame seeds
  • 30g (1 oz) pomegranate seeds

Instructions

  1. Preheat & Prepare: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Dry & Oil: Pat chicken dry, drizzle with olive oil, and rub to coat.
  3. Spice Blend: Combine salt, pepper, garlic powder, onion powder, paprika, cumin, thyme, and lemon zest.
  4. Season Thighs: Sprinkle spice blend evenly over chicken, pressing to adhere.
  5. Initial Bake: Arrange thighs skin-side up and bake for 20 minutes.
  6. Prepare Glaze: Whisk together honey, Dijon, and lemon juice.
  7. Glaze & Finish: Brush with glaze and bake for 15-18 minutes, until cooked through.
  8. Rest & Serve: Rest for 5 minutes before garnishing and serving.
