- 15ml (1 tbsp) extra-virgin olive oil
- 5g (1 tsp) kosher salt
- 2g (0.5 tsp) black pepper
- 3g (0.5 tsp) garlic powder
- 3g (0.5 tsp) onion powder
- 4g (1 tsp) smoked paprika
- 2g (0.5 tsp) ground cumin
- 2g (0.5 tsp) dried thyme
- 1 lemon, zest only
- 10ml (2 tsp) honey
- 5ml (1 tsp) Dijon mustard
- 15ml (1 tbsp) lemon juice
- 10g (2 tsp) fresh parsley, chopped
- 5g (1 tsp) toasted sesame seeds
- 30g (1 oz) pomegranate seeds
Instructions
- Preheat & Prepare: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Dry & Oil: Pat chicken dry, drizzle with olive oil, and rub to coat.
- Spice Blend: Combine salt, pepper, garlic powder, onion powder, paprika, cumin, thyme, and lemon zest.
- Season Thighs: Sprinkle spice blend evenly over chicken, pressing to adhere.
- Initial Bake: Arrange thighs skin-side up and bake for 20 minutes.
- Prepare Glaze: Whisk together honey, Dijon, and lemon juice.
- Glaze & Finish: Brush with glaze and bake for 15-18 minutes, until cooked through.
- Rest & Serve: Rest for 5 minutes before garnishing and serving.

For extra crispy skin, ensure the chicken skin is completely dry before seasoning and avoid overcrowding the baking sheet.
