  • 1.2 kg (2.6 lb) chicken thighs, cut into 4-inch pieces
  • 30 ml (2 tbsp) olive oil
  • 28 g (2 tbsp) unsalted butter
  • 4 cloves garlic, minced
  • 150 g (5 oz) onion, diced
  • 5 g (1 tsp) smoked paprika
  • 5 g (1 tsp) dried oregano
  • 5 g (1 tsp) dried thyme
  • 5 g (1 tsp) sea salt
  • 2.5 g (½ tsp) black pepper
  • 240 ml (1 cup) low-sodium vegetable broth
  • 30 ml (2 tbsp) tomato paste
  • 400 g (14 oz) diced tomatoes, undrained
  • 120 ml (½ cup) heavy cream
  • 15 g (2 tbsp) Parmesan cheese
  • 1 g (¼ tsp) red-pepper flakes (optional)
  • 5 g (¼ cup) fresh basil leaves, torn

Instructions

  1. Season Chicken: Combine chicken with paprika, salt, and pepper.
  2. Sauté Chicken: Brown chicken in olive oil and butter in batches.
  3. Sauté Aromatics: Sauté onion until translucent, then add garlic.
  4. Bloom Spices: Stir in oregano, thyme, and red pepper flakes.
  5. Deglaze Pot: Add broth and scrape up browned bits.
  6. Combine Ingredients: Return chicken to pot with tomato paste and diced tomatoes.
  7. Pressure Cook: Cook on high pressure for 10 minutes.
  8. Quick Release: Perform a quick release.
  9. Finish Sauce: Stir in cream and Parmesan; simmer until thickened.
  10. Taste & Adjust: Adjust seasoning as needed.
  11. Serve: Garnish with basil and Parmesan.

Notes

For a thicker sauce, simmer longer or add a cornstarch slurry. Chicken thighs are recommended for optimal tenderness.
