  • 1.5 kg chicken thighs, boneless skinless
  • 30 g butter
  • 30 ml olive oil
  • 150 g onion, diced
  • 3 cloves garlic, minced
  • 5 ml smoked paprika
  • 2.5 ml ground cumin
  • 2.5 ml dried oregano
  • 5 ml kosher salt
  • 2.5 ml black pepper
  • 250 ml low-sodium vegetable broth
  • 200 ml full-fat sour cream
  • 150 g mozzarella cheese, shredded
  • 15 ml lemon juice
  • 30 ml parsley, chopped
  • 5 ml lemon zest
  • 1 ml red-pepper flakes (optional)
  • 15 ml olive oil (for drizzling)

Instructions

  1. Season Chicken: Combine spices and season chicken thighs.
  2. Sear Chicken: Sear chicken in butter and olive oil until golden brown.
  3. Sauté Aromatics: Sauté onion and garlic until softened.
  4. Deglaze & Reduce: Add broth and reduce by half.
  5. Make Sauce: Whisk in sour cream and mozzarella.
  6. Simmer Chicken: Return chicken to skillet and simmer until cooked through.
  7. Plate & Garnish: Serve with sauce, olive oil, parsley, and lemon zest.

Notes

For best results, pat the chicken dry before searing. Don’t use reduced-fat sour cream, as it may curdle.
