Instructions

  1. Sauté Aromatics: Heat 1 tablespoon olive oil in a large 6-quart Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook for 5-7 minutes until vegetables soften and appear slightly translucent, then stir in minced garlic for 1 minute until fragrant.
  2. Build Broth Base: Pour in 8 cups of low-sodium chicken broth. Bring the liquid to a gentle simmer, then reduce heat to medium-low, cover, and cook for 15 minutes to allow flavors to meld.
  3. Add Pasta and Chicken: Stir in 1 cup ditalini or orzo pasta and 2 cups shredded cooked chicken. Continue cooking for 8-10 minutes, or until the pasta is perfectly al dente, stirring occasionally. If broth reduces too quickly, add 0.5 cup more broth.
  4. Finish with Greens: Remove the pot from the heat and stir in 2-3 cups fresh spinach until it just wilts into the warm soup. Season with salt and freshly ground black pepper to taste.
