  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 minced garlic cloves
  • Fresh cilantro or parsley, chopped (optional, for garnish)
  • Thinly sliced red onion (optional)
  • 1 tsp grated fresh ginger (optional)
  • 12 tbsp coconut milk (optional, for creaminess)
  • Diced bell peppers (optional)

Instructions

  1. Prep Shrimp: Pat the shrimp very dry with paper towels. In a medium bowl, toss the shrimp with 2 tbsp of jerk seasoning, 1 tbsp of lime juice, and all the minced garlic. Marinate for 10-15 minutes on the counter (you can do up to 30 minutes for deeper flavor if time allows).
  2. Sauté Aromatics: Heat 1 tbsp of olive oil in a 10-inch skillet over medium-high heat until it shimmers. Add the finely minced Scotch Bonnet pepper and any optional diced bell peppers or red onion. Cook for 2-3 minutes, stirring occasionally, until they are fragrant and just softened.
  3. Cook Shrimp: Add the marinated shrimp to the hot skillet in a single layer. Cook for 1-2 minutes per side until they just turn pink and opaque. Avoid overcrowding the pan; cook in batches if necessary for an even sear.
  4. Add Pineapple: Stir in the pineapple chunks and cook for another 1-2 minutes until they are heated through and begin to caramelize slightly.
